With baked Mac N’ Cheese cups, Dwight suggests Saladini Pilastri Falerio dei Colli Ascolani Wine, a certified organic and value-priced wine from Le Marche region in Italy. Falerio dei Colli Ascolani is produced from an ancient mixture of grapes from Trebbiano, Passerina and Pecorino. Its typical straw-yellow hue and delicate bouquet are due to the excellent position of the vineyards. This elegant and full-bodied wine goes particularly well with green olives, fish and soups, as well as delicate sauces and white meats. The next dish Dwight suggests for the holidays is Long Island Duck with a cranberry glaze, paired with a bottle Tenuta Frescobaldi di Castiglioni from the Tuscany region of Italy. This Marchesi de’ Frescobaldi ultra-premium wine is 50% Cabernet Sauvignon, 30% Merlot, 10% Cabernet Franc and 10% Sangiovese. With notes of cherry, currant, strawberry, and blue California plum, this wine finishes with a pleasant quality of freshness and fruit. Tenuta Frescobaldi di Castiglioni is great with full-flavoured cheese and is ideal with game meats, roast of pork, and roasted or sautéed beef.
